NO BAKE MINI OREO CHEESECAKE







 Cheesecakes are sinful delights, this creamy rich cheese cake with cruch of oreo cookies are ultimate delight.


 Buttery oreo crust filled with whipped cream and cream cheese and  topped with whipped cream and an oreo cookie is the best dessert you could pamper yourself with.





Cheese cakes are traditionally made by baking cream  cheese , eggs , sugar etc  .but the recipe which I used is a no bake one which includes little bit gelatin .but the texture is not that of gelatin based puddings .but little thick and crunchy at the same time .which makes this an absolute keeper recipe 


Most important thing is to beat the cream cheese to make it lumps free .and take equal quantities of whipping cream & cream cheese.and the whole mixture should be thick.


Previously I have made a  no bake mango cheese cake with cottage cheese,fresh cream but for that one mixture was liquidy and texture was not perfect , so this time I was super careful about consistency











This recipe makes about 5 mini cheesecakes , you could double or triple the recipe and make in a springform pan for a whole cheesecake . I used silicon moulds which I use for making cupcakes ,I personally like these miniature cuties compared to large ones , they are of perfect serving size 
 I used home made cream cheese ,recipe of which I got from sharmis passions blog .you can try that or use storebrought one 


Ingredients 

Cream cheese- 100gms 
Whipping cream powder - 1/2 sache ( 15 gms )
Chilled milk - 4- 6 tblspns
Powdered Sugar -4 tblspns 
Oreo cookies - 10- 15 no
Butter - 2 -3 tblspns
Condensed milk-1/4 tin
China grass- 5g


Method

  • Crush 8-9 oreos in a blender 
  • Melt butter and mix the crushed powder  to make the base of the cheesecake 
  • Take the mould / springform pan and make the base
  • Keep in the refrigerator for setting
  • Lets make the filling
  •  First we have to prepare whipped cream , for that keep the bowl and beating blade in the refrigerator for some time 
  • Prepare an icebath with icecubes 
  • Take whipping cream powder and chilled milk ( use frozen milk for best result )
  • And beat the mixture on low speed, gradually increasing the speed untill soft peaks form 
  • Dont overbeat the cream it will curdle 
  • Keep the cream in the refrigerator 

  • Combine cream cheese and sugar .beat on low speed .beat the mixture as much soft as possible ,and make it lumps free
  • Combine both whipped cream and cream cheese
  • Add condensed milk 
  • Crush the remaining oreos in a blender coarsely 
  • Add this also to the mixture 
  • Soak gelatin in little water for 5 minutes ( just enough water for it to soak)
  • Heat it on low flame and stir to dissolve 
  • After it is completely melted add to the mixture 
  • Stir well to combine 
  • Pour in to  the prepared moulds 
  • Keep in the freezer to set
  • Let it set overnight or maximum four hours 
  • Take out of the mould and top with whipped cream and oreo
Serve chilled
