Summer is at its utmost glory presently in our place ,Scorchy summer calls for icecreams ,..
eventhough it is not good for health . by the way who cares , but to eat without giving my son is a bit challenging , iam afraid he will find me hiding and eating ( he is down with flu so cant have them ,and is pretty cranky all the time , sigh...:( )
I have been planning to do this post for a long while .but many things kept me from not doing .so here it is finally..
Tender coconut is something we south indians never get tired of eating , both flesh and water are equally nourishing.Naturals icecream parlour have popularised the tendercoconut icecream , and I wanted to try at home .Just like every whipping cream based icecream it is very easy .
So here is the recipe folks, do try them when u can get your hands on some fresh tender coconut , recipe adapted from cookingishooking.com
Tender coconut icecream
1.Tender coconut flesh and water - from two coconuts
2.Whipping cream powder - 2 sachets
3.Cold milk-1/3 cup
4.Condensed milk -1/2 tin
5.Tender coconut flesh chopped into small pieces- 1/3 cup
6.Coconut milk-1/2 cup
Method
1.Blend coconut flesh and water into smooth paste
2.Beat the whipping cream into stiff peaks
!Add condensed milk to the cream and beat well
4.Add coconut milk and blended paste into whipped cream and mix well
5.Add bite sized pieces of tender coconut into mix
6.Transfer to a freezer safe container
7.Freeze well for atleast 6 hours
8.Take out from the refrigerater
9.Keep in the counter for at least 10 minutes
Scoop and serve (I served them with some choco chips and almond flakes ( purely optional )
