FLUFFY BANANA PANCAKES






Pancakes doesnt need big introduction , and is one of  the favourite breakfast around the world. They are basically flat thin cakes prepared from starch based batter which may or may not contain milk and eggs.



I have not seen another dish  which is so versatile so that each & every country & region has its own authentic pancake recipe , some are thin ,some crisp , some thick fluffy , some made with wheat, some rice, some with pulses .In india we have variety of them , dosa, appam, neerdosa  of south india while besan cheela , moong dal cheela are from  north india .




But now  generally the name  pancakes refers to those made with wheat flour , eggs , milk etc .The very interesting thing about pancakes are almost anything can be added to pancakes like  bananas , apples and other fruits , nuts& cereals, and could be eaten with honey, cream,syrup or chocolate sauce etc .

Today I have here a recipe of fluffy banana pancakes , bananas are rich in dietary fibers , pottassium , magnesium etc, so these pancakes are ideal breakfast food , it contains milk and eggs which has protien and use whole wheat flour for added benefits .

Feeding my son is a tricky business for me , so simple recipes which packs nutrients are my favourites.so do  try this  pancake for breakfast tomorrow


FLUFFY BANANA PANCAKES 

Preparation time -15 minutes 
cooking time - 5-10 minutes  
Makes about 10 pancakes 


INGREDIENTS 


  1. Whole wheat flour-3/4 cups
  2. All purpose flour -3/4 cups
  3. Eggs -2 nos
  4. Milk- 1 1/2 cups
  5. Bananas- 2 medium sized
  6. Baking powder- 1 tsp
  7. Vanilla extract- 1 tsp
  8. Butter / veg oil - for greasing pan 
  9. Salt- 1 pinch
  10. Sugar - 2 tblspns or more according to your preference
  11. Chocolate sauce / syrup/ honey



                                     METHOD



  • Sieve flour, baking powder, salt together in a bowl

  • Mix milk , sugar , vanilla in another bowl

  • Seperate egg whites and yolks

  • Beat the egg whites  using  a hand whisk till fluffy and soft

  • Add the yolks to the second bowl and whisk well

  • Mash bananas well and add it to the second bowl

  • Mix contents of both bowls except egg whites

  • Fold egg whites gently into the batter in two or three additions

  • Mix gently without deflating air bubbles in the batter

  • Heat the pan and add little butter or oil

  • Pour the batter using scoop or ladle

  • Donot try to  rounden it .it will form a shape of its own 

  • Wait till bubbles form and flip it once done on one side

  • Keep the flames very  low  to avoid burning 

  • Serve with sliced bananas, honey, chocolate syrup etc
