PANEER&CHICKEN RAVIOLI




Ravioli is known to be king of all pastas, it is a type of stuffed pasta  in fact .classic ravioli pasta is filled with ricotta cheese and served with a sauce , ricotta is a type of cottage cheese,  i couldnt find it any stores here so I decided to substitute it with paneer .

Here is my desi version paneer and chicken filled ravioli in makhani gravy , makhan gravy is a tomato based buttery gravy , sourness of tomatoes are balanced by addition of fresh cream .This fusion dish is definitely a show stopper .





Silky smooth ravioli with paneer and fried chicken filling , in a comforting tomato butter gravy will make for a special weekend dinner .
Main challange in making this dish was making homemade pasta dough ,and to my surprise it turned absolutely perfect , even though rolling pasta without pasta machine is a bit tedious , raving  remarks from family were worth all the effort .and it really made my day .

                                RECIPE CARD

              PANEER & CHICKEN RAVIOLI
Serves :4- 5 people 
Preparation time :30  minutes 
Cooking time : 30 minutes

                            INGREDIENTS

FOR PASTA DOUGH

All purpose flour-300 gms(2 1/2 cups)
Egg- 2 no
Water- 1/2 cup
Vegetable oil- 3 tbsp

FOR FILLING RAVIOLI

Paneer- 1/2 block 
Chicken-5-7 pieces 

FOR MARINATING CHICKEN

Salt - 1 tspns
Pepper -1 tspns
Chilly powder-1tblspns
Turmeric powder-1tspn
Ginger garlic paste -1 tblspn
Oil for frying -as required

FOR GRAVY / SAUCE
Butter - 2 tblspn
Cloves- 3-4
Cumin -1/2 tspn 
Tomato - 3 medium 
Onion - 1 large
Ginger garlic paste -2tspns
Cashew nut paste -2 tblspns
Chilly powder- 1 tblspn
Salt-as required
Sugar-1/2 tspn
Fresh cream- 1/2 cup



                                         METHOD 
First marinate the chicken in ingredients listed for marination  and keep it aside

For preparing pasta dough 
Take the flour sift it well , 
Make a well in the centre  and add eggs ,

Using a fork slowly mix eggs with the flour incoperating it completely keeping the well shape intact 
After that add oil one tblspn at a time and knead well 
Add water little by little and knead well for 5 minutes or till it is soft

Now wrap it with cling film and keep in the refrigerator for 10-15  minutes 

Preparing filling 

Fry marinated chicken till it is well cooked

Cool it and shred 
Crumble paneer with hand and mix it with shredded chicken 
Put in a pan and heat it , stir and combine

Taste and adjust the seasoning if required and keep it aside 
(No more masala is needed as it is already added to fried chicken )

Preparing gravy

Blend tomatoes , cloves, cashew nuts, and little water together 
Heat  butter in a pan , add cumin 
Add ginger garlic paste and chopped onions
                          
Add tomato puree and keep it covered , let it simmer and cook
                             

Add chilly powder , garam masala , salt , sugar  
Kasoori methi.
Finally add fresh cream 


Now we go back to making ravioli 
Take the dough out of the refrigerator 
Divide the dough into four parts 
Take one part and roll it into thin sheet 

Place the filling

Cover it with another sheet 
Press well to seal the sides 
Cut it with pastry cutter

Repeat the process for the rest of the dough 
Heat water in a sauce pan 
Add salt and oil 
Put the prepared ravioli in boiling water 
Cook it for 2 minutes maximum  .
It will be perfectly cooked by that time 
Drain water and pour cool water over it 

Put the prepared ravioli in the gravy , toss well and serve
